“Chicken and Leek Cannelloni”
Dada ayam 4
Olive oil
Leek 1
Butter 40gr
Thyme ½ bunch
Plain Flour 1tbs
Chicken Stock 125ml
Pouring Cream 125ml
Parmesan (grated) 40gr
Tomato sauce:
Tomato 8
Olive Oil 2tbs
Garlic 1 Clove
Basil ½ bunch
Caster Sugar 2tsp
Crepes:
Plain Flour 200gr
Eggs 2
Milk 400ml
Melted Butter 80gr
HOW TO:
1.Tomato Sauce
a.Blanch tomato deseeded, peeled
b.Then mix all ingredients in one pot + 60ml of water..blitz it and season to taste.
2.Crepes:
a.Mix all ingredients with only 1tbs of butter.
b.Use the remain butter to fry the crepes.
3.Cannellini:
a.Cut the chicken into strips
b.Pan fry the chicken.
c.Sauté the leek + flour + Stock + 80ml of Cream until thick
4.Roll the crepes with the cannelloni inside.
5.In a baking tray, put the crepes in order.
6.Pour the remaining pouring cream, parmesan and tomato sauce on top of crepes
7.Bake at 200 0C until the parmesan is melted and it has rusty color.
